Rösti potato cheese on farmhouse bread with radishes, cress, cherry tomatoes and red onions
Preparation
- Rösti potato cheese: Fry the Rösti Potatoes, finely grated, in a pan and toss until they have thawed and taken on colour. Transfer to a bowl and mix well with the remaining ingredients. Season to taste with caraway, nutmeg, parsley, salt and pepper.
- Farmhouse bread: Spread the Rösti potato cheese on the fresh slices of farmhouse bread, sprinkle with the grated mountain cheese and bake in the oven until the cheese is slightly melted. Alternatively, flambé the cheese. Arrange the radish and tomato slices as well as the onion rings on top. Garnish with cress and freshly ground pepper.

4 slices of farmhouse bread
60 g Alpine cheese, grated
4 radishes, cut into slices, halved
8 cherry tomatoes, cut into slices
2 medium-sized onions, cut into rings, halved -
Rösti potato cheese:
300 g 11er Rösti Potatoes, grated potato
125 g sour cream
75 g crème fraîche
35 ml cream
1 clove of garlic, finely chopped
1 tsp whole caraway seeds
1 pinch of nutmeg, grated
Parsley, fresh, finely chopped
Salt, pepper -
As garnishing:
1 bunch of cress
Ground pepper
