11er Crispy Rösti | with beef tatar, Parmesan and quails’ eggs
Preparation
- Place the 11er Rösti on a baking tray and heat for approx. 10 minutes in a 180°C oven.
- To make the beef tatar, chop the fillet of beef finely and mix well in a bowl with the gherkins, onions, anchovies, parsley, cayenne pepper & paprika powder, mustard, ketchup and cognac. Season to taste with salt and pepper.
- Heat oil in a pan and fry the quails’ eggs in this as fried eggs.
- Serve by arranging the baked 11er Rösti on a plate as a base. Then place the rocket and parmisan on top of these. Spoon the tatar over this and carefully lay the fried quail’s egg on top as the final layer.
